Environmental Work at The Winery Hotel

Our ambition to offer hotel experiences with the greatest possible consideration for the environment has been part of The Winery Hotel since the very beginning. Today, the hotel is certified with the Nordic Svanen Ecolabel, Sweden’s only Type 1 ecolabel for hotels. This means that everything from cleaning chemicals to waste sorting and energy consumption has been reviewed by Ecolabelling Sweden to ensure compliance with Svanen's strict criteria. The building is also certified under BREEAM with a rating of “Very Good”.

As a guest, you can feel confident that we take responsibility for minimising our environmental impact – whether you are visiting for a stay, conference, wine tasting or dinner. Below are some examples of how we work:

  • All our energy comes from renewable sources. Together with our property owner, we actively work to reduce energy consumption through smart energy use, demand-controlled lighting and energy-efficient fittings.
  • Our water consumption is monitored regularly to make sure it remains within the limits set by Svanen. Each room is equipped with low-flow taps, shower heads and toilets.
  • We sort waste into more than ten different fractions, train our chefs to reduce food waste and make it easy for guests to recycle through in-room information. Our reception is open 24 hours a day for waste that requires special sorting.
  • We use ultra-purified water for cleaning whenever possible and otherwise complement this with environmentally certified cleaning products.
  • In our kitchen, we follow a core philosophy based on respect for ingredients and making full use of them. We actively work to minimise food waste, use seasonal vegetables, prioritise Swedish-produced ingredients where possible and primarily serve MSC- and ASC-certified fish.
  • We have a long-term partnership with Stremtech AB, which supplies greens grown using an aquaponic system. These deliveries cover our needs for both breakfast and à la carte service.
  • We bake our bread and pastries in our own bakery using organic flour. Other staple products, such as milk, are also organic.
  • In our urban winery, we produce our own wine, Winery Red, from organically grown grapes from our vineyard, Terreno in Tuscany. Winery Red is certified organic under EU regulations, meaning we also meet strict requirements during the vinification process.

Svanen is a voluntary certification. This means that companies choose whether to undergo the rigorous assessment required to obtain the label.

Taking sustainability and environmental issues seriously provides reassurance for both our guests and our employees. Our environmental focus has been part of our business from the start, and the Nordic Swan Ecolabel certification makes this even clearer. We took this step to highlight our commitment to offering hotel experiences with as little environmental impact as possible. We have also made the decision to vinify only organically grown grapes for our wines.

HOW HAS THE PROCESS BEEN?

It has been valuable for us to review every aspect of the hotel to identify where we can optimise and improve. The process has involved many members of staff and has increased awareness across all departments of how each of us can contribute to becoming even more sustainable and environmentally responsible.
