Our Commitment to the Environment

The ambition to offer hotel experiences with the greatest possible respect for the environment has been with us since the very beginning of The Winery Hotel. Today, the hotel is ecolabelled with the Nordic Swan Ecolabel, Sweden’s only Type 1 environmental certification for hotels. This means that everything, from cleaning products to waste sorting and energy consumption, has been carefully reviewed by Ecolabelling Sweden to ensure that we meet the Nordic Swan’s strict standards.

Our building is BREEAM-certified with a rating of "Very Good". As our guest, you can feel confident that we take full responsibility for minimising our environmental impact, whether you are here for a holiday, a conference, a wine tasting or a dinner.

Here are just a few examples of how we work towards a more sustainable future:

• All our energy comes from renewable sources. Together with our property owner, we actively work to reduce energy consumption through smart energy use, demand-controlled lighting and energy-efficient fixtures.
• Our water consumption is regularly monitored to ensure that it stays within the Nordic Swan’s approved range. Every room is fitted with water-saving taps, shower heads and toilets.
• We sort our waste into more than ten categories and make it easy for guests to recycle through clear information. Our reception is open 24 hours a day for guests who need assistance with sorting specific types of waste.
• We use ultrapure water for cleaning whenever possible, complemented by environmentally certified cleaning products.
• Our kitchen philosophy is based on respect for the produce and on making the most of everything we use. We actively work to minimise food waste, use seasonal vegetables, prioritise Swedish produce whenever possible and serve mainly MSC- and ASC-certified fish on our menus.
• We have a long-term partnership with Stremtech AB, who supply leafy greens grown in an aquaponic system, a circular farming method where fish, plants and bacteria coexist naturally. These deliveries cover our needs for both breakfast and à la carte service.
• All our bread and pastries are baked in-house using organic flour. Other staple products, such as milk, are also organic.
• In our urban winery, we produce our own wine, Winery Red, made from organically grown grapes from our vineyard Terreno in Tuscany. Winery Red is EU-organic certified, which means we also meet strict requirements throughout the winemaking process.
